Provision PGH Hosting Farm Dinner With Lambchetta, Woodfired Flatbreads, and Homemade S’mores

Pittsburgh was sad to say goodbye to Provision Pgh when the first round of Smallman Galley chef’s graduated at the end of May.

However, that disappointment was short lived. The city soon learned that the team behind Provision – husband and wife duo Stephen Eldridge and Susan Cope – were opening not one, but two new restaurant concepts in The Federal Galley, the Smallman Galley’s second location, which will be opening soon on the Northside of Pittsburgh.

The team is bringing back Provision Pgh (yes, Provision burgers!), as well as opening a new Mexican-influenced concept called El Lugar.

While the opening for The Federal Galley is quickly approaching, fans don’t need to wait that long to taste these delicious concepts.

On Sunday, November 5, Provision Pgh & El Lugar are teaming up with Root and Heart Farm in Gibsonia to host a Farm Roast to benefit The West Deer Backpack Program.

The West Deer Backpack Program works to fight child hunger within the Deer Lakes School District. Every Friday, the program fills backpacks with food items to send home with students who may not have access to meals over the weekend.

This is the second year that Root and Heart is hosting the fundraiser. Last year they teamed up with Dennis Marron of Merchant Oyster Company, and or, The Whale.

The menu for the event intertwines the cuisine of both Provision and El Lugar, and is heavily influenced by the capacities of the farm.

“A lot of it came from knowing what we can accomplish out there,” says Eldridge. “They have a big pit, wood burning oven, and they’ve built a splay. It’s going to be super casual, and it’s supposed to be. When you get there, you’ll grab a beer and we will be doing some flatbreads and green chili stew to warm you up.”

With a few days left for a couple of tweaks, the menu for the event is currently set to be:

Wood Fired Flatbreads with Farm Veggies + Homemade Cured Meats
Warm Green Chile Stew + Tortilla Chips + Pickled Onion
Root & Heart Greens + Preserved Citrus Vinaigrette
Pit Roasted Pork + Smokey Chicken served with Warm Tortillas + Flatbreads + Relishes + Salsas
Garlicky Farm Greens
Stewed Beans
Roasted Root Veggies
Campfire S’mores with Graham + Chocolate + Homemade Marshmallow

Most of the produce for the event will come directly from Root and Heart Farm, exemplifying the farm to table concept.

The farm has been hosting farm dinners all summer long, but the November 5 event is the last dinner for the season.

“I am just excited to get out there, cook and use the produce from the garden,” says Eldridge. “I also have some lamb style pancetta, or ‘Lambchetta.’”

Root and Heart Farm – which is about 35 northeast of Downtown Pittsburgh – feels completely disconnected from the city, even though it’s only a short drive away. The event will feature live music, and two furry goat friends! Grist House will be providing the beer.  

The evening is child-friendly, and everyone, no matter the age, will love the dessert – roasting s’mores over the fire with homemade marshmallows!
