At the Smallman Galley, good chefs come, and good chefs go. That’s baked into the DNA of the restaurant incubator, with each restaurant signing on for about a year or so before another concept moves in.
But it doesn’t make it any easier when one of your favorites is set to depart.
Both brunoise and Colonia are leaving the Galley this week, with the final service for each on Sunday, May 27.
That means that you have one final week to enjoy dishes from brunoise chef Ryan Peters, like their super-popular fried chicken sandwich (topped with celery seed aioli, pickles, honey and hot sauce), Mac & Cheese, and their burger, which is one of the best in the city.
For their final week you can also enjoy the restaurant’s famous S’mores dessert, an Instagram-worthy dish with chocolate, graham, burnt marshmallow meringue and a scoop of ice cream from Millie’s Homemade. It made its way back on the menu after a few months’ absence, and should definitely make your to-do list this week.
Over at Colonia, chef Jesse Barlass’ pupusas deserve one final taste, as does his Casamiento “Wedding” Bowl, a dish made with Salvadorian rice, beans, plantains and vegetables.
Colonia and brunoise will be serving lunch and dinner from now through Saturday, and brunch on Saturday and Sunday.
And coming soon to the Galley are two brand new concepts: a modern European cafe called Joey from the Vandal’s Joey Hilty, and Home, a classic comfort food restaurant from Phill Milton.
