New life has sprung in the former Salt of the Earth building on Penn Avenue in Garfield. Fish Nor Fowl, a new restaurant concept from prolific Pittsburgh restaurateur Richard DeShantz, will officially open by the end of this week.
“Fish nor Fowl is an American restaurant that celebrates an evolved perspective on thoughtful usage of ingredients and preparations,” says Executive Chef /Partner Dan Carlton of the restaurant on their website. “Utilizing flavors and techniques from around the globe, we work to create an identity that can neither be defined nor classified.”
The DeShantz Restaurant Group announced their intention to open a new concept in the building in 2016. Of course, since that announcement, the group has been extraordinarily busy opening two other restaurants – Pork & Beans (2016), and Poulet Bleu (2017) – as well as developing the concepts for a fried chicken restaurant, Coop de Ville, that will eventually open in The Strip District, and a gin and raw fish bar, Gi-Jin, which will be located Downtown.
Both Pork & Beans and Poulet Bleu have been met with praise since their opening, and now it is time for Fish Nor Fowl to step into the limelight.
The restaurant announced on social media that they are now accepting reservations starting this Thursday, August 23.
Fish Nor Fowl also posted menu, which is broken into three sections. Guests can order food from the “Water,” eg: uni, scallop crudo, and grilled halibut collars, the “Field,” eg: panzanella, baby eggplant, smoked goat cheese, and roasted wild mushrooms, and the “Farm,” eg: cured foie gras carpaccio, confit lamb tongue, and gnudi with beef heart bolognese. All three menus have suggested cocktail pairings.
There is also a dessert section (eg: olive oil cake and zucchini bread) and a “Digestif” menu of different Amaro, Scotch, and Sherry.
Chef Ryan Peters, who worked at Salt of the Earth before it closed in 2015, will be returning to the building as the Sous chef of Fish nor Fowl. Prior to joining the team, Peters was the chef/owner of brunoise in the Smallman Galley.
