Big news for fans of good food: Cure’s Justin Severino has just announced plans to open a Spanish tapas restaurant in Lawrenceville next summer.
Morcilla will be located at 3519 Butler Street, just a few blocks away from Cure. The 54-seat restaurant, with a 10-seat bar and a six-seat chef’s counter, will be a larger, more casual spot than Cure, with a substantial oak-fired grill as a central part of the kitchen.
Severino, along with wife and business partner Hilary Prescott Severino, plan to create a menu that includes traditional Spanish tapas options, including:
Mariscos tapa: Raw, pickled and smoke shellfish
Escabeche y Conservas: Duck with fruit jam, marinated cheeses, grilled tomato, zucchini, and grilled bread
Pintxos: Skewered bites of octopus, pork belly, and blood sausage.
The kitchen will also include a dedicated curing station, for creating Spanish-style charcuterie.
The menu is set to feature shareable small plates, and larger, family-style dishes.
Over at the bar, Prescott Severino will oversee the wine program, with a focus on Spanish wines and sherries, plus obscure Spanish ciders. Cure bartender Colin Anderson will also have a hand in the final cocktail menu, creating his version of Spanish favorites like sangria and sherry tinctures.
