Congratulations are in order for Independent Pizza Company, an artisan pizza company featuring handmade pies made from fresh, local ingredients. They’re opening at the Pittsburgh Public Market today at 11:00, just in time for lunch.
Independent’s pies are made with naturally-leavened dough, and house-made fresh mozzarella. The menu is small, but significant: A handful of ‘house selection’ pies, like the Pork & Pepper, with white sauce, house-made fennel sausage and house-pickled banana peppers, and a Build Your Own menu, with a variety of sauces, vegetables, cheeses and proteins.
The pizzas are about 12 inches, just enough for 6 good-sized slices.
