Looking for a different kind of dinner? All this week, Legume is featuring an offal tasting menu, highlighting the organs and entrails from healthy, pasture-raised animals.
The tasting menu will feature beef offal, including kidney, tripe, liver and tongue. While there are still a few surprises to be had, chef/owner Trevett Hooper says that the menu will feature Egg Shirred in Tripe Stew, Beef Liver with Onions Too Many Ways, Pommes Daphine, and Mincemeat Pie, made with tongue.
Legume is also planning a ‘Good Luck’ menu on New Year’s Day, featuring sauerkraut and pork, and Black-Eyed Peas, greens and corn bread.
