It’s a big day for the Smallman Galley. After a successful inaugural chef class, a new crop of four chefs will be taking over the kitchens at the restaurant incubator, starting today.
The four new restaurants include Ironborn Eatery, serving Detroit-style pizza, Banhmilicious, with authentic Vietnamese cuisine, Colonia, offering a variety of Latin America cuisines, and Brunoise, with an approachable take on fine dining.
Ironborn Eatery
Pete Tolman’s Ironborn Eatery will feature pan-style pizza, cooked in a cast iron with a crisp crust. The menu will also include burgers, sandwiches, wings, and daily specials.
On the menu:
- Red Pie: Detroit Red Top Pie with brick cheese, pepperoni, a red top and Brown Cow parmigiana
- Smoked Baby Back Ribs: Charred corn elote, French fries, house BBQ
- Oysters: Served with traditional garnish of Tabasco and lemon
- Hand-Forged Burger: Charred lemon, iceberg, American cheese, bread & butter pickles, special sauce and shoestring onions
- Chicken Wings:Â Served with mild, hot, sweet & tangy, Macadoo, garlic chili or honey BBQ sauce, with shaved fennel, carrot and celery salad
- Bucatini: Summer vegetables, white wine, Kalamata olives and Brown Cow parmigiana
Colonia
The menu at Jesse Barlass’ Colonia will feature diverse cuisines of Latin America, with made-from-scratch sauces and tortillas, and a regularly-changing menu.
On the menu:
- Pupusas: Stuffed corn tortillas topped with fermented slaw, shaved jalapenos and whey salsa
- Molletes: Crusty baguette with toasted and smothered black bean puree, Oaxacan cheese, pickled onions and avocado puree
- Pepino and Jicama Salad: Cucumbers, red onions, Bell pepper, jicama, cilantro, grapefruit and Tajin vinaigrette
- Casamiento ‘Wedding’ Bowl: Salvadorian rice, bean, plantain and vegetables
- Cochnita Pibil: Marinated pork shoulder slowly cooked in banana leaves, rice, pickled red onions and charred orange chicharrón
- Skirt Steak: Chile lime-marinated steak served with chochos, pickled onions and cilantro
 Banhmilicious
Hoa Le will bring authentic Vietnamese street food (primarily Banh Mi), to Banhmilicious, her concept at Smallman Galley.
On the menu:
- The Ancient Banh Mi: Steamed pork roll and BBQ pork
- Zizzle Singe Bwwaakk Banh Mi: Grilled lemongrass chicken
- Juicy Moo Banh Mi: Grilled steak with special delight soy sauce
- Noodles: Served on a bed of vermicelli rice noodles, lettuce, pickled vegetables, mint, cucumbers, carrot, crispy shallots, crushed roasted peanut and sweet fish or delight soy sauce
- Tacos: Fresh soft shell tacos with mayo, pate, cucumbers, and pickled vegetables
- Rice:Â Lettuce, pickled vegetables and sauteed green onion served on a bed of broken jasmine rice with sweet fish or delight soy sauce
Brunoise
The menu at Ryan Peters’ Brunoise will emphasize accessible dishes with a fine-dining slant, using primarily locally-sourced ingredients.
On the menu:
- Bread & Butter: Grilled to order, salted butter and radish
- Clams: With chorizo, saffron and summer greens
- Risotto: Pecorino, lemon and fine herbs
- Chicken:Â Caramelized shallot jus, pommes dauphine and vegetables
- Pasta: Beef and veal, tomato, basil and Parmesan
- S’mores: Flexible chocolate, smoked meringue and graham

Smallman Galley is open Tuesday through Friday for lunch and dinner starting at 11:00 a.m., and on Saturdays and Sundays for brunch service starting at 10:00 a.m.
