After months of renovations, menu planning, and pop-ups, Smallman Galley has announced an official opening date for the four-deep restaurant incubator in the Strip District.
Service will start on Tuesday, December 15 at 4:00 p.m. for dinner, and all four restaurants – Provision PGH, Aubergine Bistro, Carota Café, and Josephine’s Toast – plus the space’s full bar, will be open for business.
They’ve also released the menus for each restaurant. You can see the full menu on their site, but we’ve made our own picks for what we’re most excited to order.
- Provision Smothered Fries: Roasted squash, lentils, goat cheese, lemon aioli, herbs
- Chicken Liver Pate: Buttermilk biscuits, pickles, mustard, soft egg
- Simple Greens: Seasonal lettuces, preserved lemon dressing
- Bahn Mi: Crispy chicken skin, chicken liver smear, Vietnamese pickles, cilantro, mint, jalapeno, mayo, baguette
- Beef: Beer-braised beef cheeks, Anson Mills rice grits, onion argro dolce, jus, aioli, parsley oil
- Sundae: Buttermilk & cheddar biscuit, apples, vanilla ice cream, apple butter
- Pudding: Butterscotch pudding, whipped cream, roasted winter squash, pistachio brittle
- Red Corn Polenta: Roasted vegetables and pomegranate molasses
- Kale-Buttermilk Biscuits: Red eye gravy
- Sausage & Potatoes: Melted fontina fontal
- Potted Pork Confit: Crostini and seasonal accompaniments
- Porchetta & Smashed Potatoes: Brown gravy, garlic, pickled okra
- Fresh Pasta: Roasted seasonal vegetables and pesto
- Chicken Pot Pie: Yellow potatoes, carrots, onions, celery, herb cream sauce
- Carrot: Roasted heirloom carrots, miso carrot broth
- Borscht: Beets, spicy beet broth, smoked choi
- Roast Chicken & Sweet Potato Waffles for Two: Half chicken, two sweet potato waffles, baby roots
- Octopus: Crispy peewee potatoes, collard chimichuri
- Fennel Bouillabaisse: Saffron orange broth, radish, golden beets, clams
- Chocolate Babka
- Whole Wheat Toast, with winter squash soup with cashews and cranberries
- Ciabatta Toast with tatsoi, root vegetable, honey ginger dressing, cilantro and sesame seeds
- Garlic Toast with confit chicken, escarole, olive oil potatoes, and parmesan reggiano
- Brioche Toast with beef bourguignon, pickled shallots and St. Andre
