We are officially in those lazy, hazy days of summer, when everybody’s more relaxed, and it’s never too early for a cocktail.
And if you need a little inspiration in your home bar, the folks at The Fluted Mushroom have shared a deliciously spicy recipe for a summer watermelon margarita, made with a homemade jalapeno-infused tequila (trust us, it’s not as scary as it sounds).
Your Monday night will thank you.
Lela Rose’s Spicy Watermelon Margarita
- – 1 jalapeno (cut lengthwise)
- – 3/4 cup tequila blanco
- – 2 & 3/4 cup watermelon cubes (seedless)
- – 6 T fresh squeezed lime juice
- – 6 T simple syrup
- – 1/4 cup Mezcal
Scrape seeds from jalapeno, remove stem, and devein. Drop the remaining jalapeno into tequila, and let it infuse for 30 minutes.
Strain the tequila, and discard the jalapeno.
Put watermelon cubes in a pitcher, and muddle coarsely.
Add simple syrup, lime juice, jalapeno-infused tequila, and mezcal.
Refrigerate until chilled, and serve over lots of ice.
