There is a big difference between “Fish Fry”, “Good Fish Fry”, and the”Best Fried Fish”. There would be a benefit to actually identifying the basics of good fried fish during Lent. In my experience too many of fish friers don’t know the basics of a great fried fish – breading, oil temp, time, and equally important to the fish — the freshness and quality of the bread. I’ve had too many bad experiences with oily fish, soggy coating, and bad buns. You would really do everyone a favor if you interviewed the cooks behind the great fish sandwiches and learn their methods; and then share that information so that the mediocre “fried fish processors” could upgrade their product.

St. Teresa of Avila Catholic Church is mentioned in the first photo, but it’s left of the list. Here is their website: https://neighborsnorth.org/fish-fry
